Jason Palin’s bread baskets with goats cheese & pickled vegetables

Cheshire chef Jason Palin has used Roberts bread to create an innovative crunchy basket to hold a wonderful goats cheese and chive filling. Ideal as a starter course and fun to make with the kids too who will love rolling out the bread!

Serves 4

200 grams of goats cheese, crumbled
Splash of double cream
Small bunch of chopped chives
4 slices of your favorite Roberts bread
2 tablespoons of olive oil
1 tablespoon of vinegar
1 tablespoon of water
4 black pepper corns, crushed
1 bay leaf
1 carrot peeled and chopped
1 stalk of celery peeled and chopped
1 shallot, diced


  • Mix the goats cheese, cream and chives together
    Roll out the bread to make it thinner and then cut into a circle
  • Mould the bread into a small ramekin and bake in the oven at 180°C for 6 minutes until crisp and golden
  • Place the bread baskets on a baking tray and fill with goats cheese mixture
  • Pop back into the oven for 2 minutes to soften the cheese
  • To pickle the vegetables, mix the vegetables, olive oil, vinegar, water and seasoning in a pan, bring to the boil and then take off the heat and allow to cool
  • Serve the bread baskets on a bed of salad leaves and drizzle the pickled vegetable dressing over the top.
