You'll need

1 Avocado
1 lime (juiced)
Micro Herbs
Handful of Red Onions, sliced (optional)
2 Radishes sliced (optional)
Chilli Flakes (optional)
Salt and Pepper (to taste)
Extra Virgin Olive Oil
2 slices of our Seriously Seeded Bloomer

How to make it

Slice your avocado in half and pop the flesh out of both sides, straight into a big bowl. Grab a fork and mash it all up with some fresh lime juice and a handful of micro herbs. Season to taste.

(If you’re not quite ready to eat it yet, pop the avocado stone back in the bowl with your mixture – it should stop it going brown quite so quickly. Though you should eat it soon after making.)

Pop two slices of your chosen bloomer straight into the toaster – toast until crisp and spread with butter.

Next, lather each slice with your avocado combo.

To serve, sprinkle over the garnish of your choice (sliced radishes, sliced onions or chilli flakes) – and drizzle with a nice bit of olive oil.

Mix it up

You can get creative with your avocado on toast! Why not try adding grainy mustard to the mix, for an extra kick? Or toss in some sweetcorn, chopped cherry tomatoes and smoked paprika, to add a Mexican twist.
