Pop the feta, lemon juice and black pepper into a bowl, and mix it all together with a fork.
Lightly toast both sides of your sandwich slim and, whilst hot, spread with your seasoned feta mixture.
Top both open sandwiches with some grated lemon zest, torn basil and chopped mint leaves, and enjoy.
